Malteser Brownies
Makes - 32
Skill level: Easy
Hands-on time 20 minutes, oven time 40 minutes, with an additional 4 hours chilling time.
Ingredients
- 400g unsalted butter
- 400g good-quality dark chocolate (at least 70% cocoa solids)
- 6 large eggs
- 400g golden caster sugar
- 100g plain flour
- 200g Maltesers, plus extra for decorations
You will also need...
- Two 20cm x 20cm square brownie tins.
Method
- Heat the oven to 170 degrees C/ 150 degrees C - fan oven/ Gas 3.5.
- Line the brownie tin with non-stick baking paper
- Put the butter and dark chocolate in a heatproof mixing bowl and set over a pan of simmering water, make sure the bowl is not touching the water
- In another mixing bowl, combine the eggs with the caster sugar. when the chocolate mixture has melted, stir into the egg mixture with the flour and Maltesers
- Pour the batter into the prepared tin and bake for 40 minutes until the top has developed a crust but the mixture still wobbles slightly when you nudge the tin, then leave to chill for 4 hours.
- Slice into squares and serve topped with lightly crushed Maltesers.
