 Malteser Brownies




Makes - 32 

Skill level: Easy

Hands-on time 20 minutes, oven time 40 minutes, with an additional 4 hours chilling time.

Ingredients 

  • 400g unsalted butter
  • 400g good-quality dark chocolate (at least 70% cocoa solids)
  • 6 large eggs
  • 400g golden caster sugar
  • 100g plain flour
  • 200g Maltesers, plus extra for decorations

You will also need...
  • Two 20cm x 20cm square brownie tins.

Method

  1. Heat the oven to 170 degrees C/ 150 degrees C - fan oven/ Gas 3.5.
  2. Line the brownie tin with non-stick baking paper
  3. Put the butter and dark chocolate in a heatproof mixing bowl and set over a pan of simmering water, make sure the bowl is not touching the water
  4. In another mixing bowl, combine the eggs with the caster sugar. when the chocolate mixture has melted, stir into the egg mixture with the flour and Maltesers
  5. Pour the batter into the prepared tin and bake for 40 minutes until the top has developed a crust but the mixture still wobbles slightly when you nudge the tin, then leave to chill for 4 hours.
  6. Slice into squares and serve topped with lightly crushed Maltesers.
